Red Curry soup October 2015

Healthy and spicy curry with salmon and Fitnessnoodles®.

2 servings
1 package Fitness noodles®
400 ml of Coconut Milk
2-3 cups Water
1 Lemongrass
50 g fresh Ginger
1-2 tbsp Red Curry Paste
300 g Salmon fillet , diced
1 Broccoli, split into small pieces
150 g Sweet Peas
2 Scallions, sliced
2 tablespoons Asian Fish Sauce
1 ½ Lime juice

Share lemon grass on the length and beat lightly with for example the top of the knife handle. Peel and shred ginger and scallions. Add lemon grass, curry paste, coconut milk and water in a saucepan. Boil for 5 min. Add ginger, broccoli, peas and scallion and cook another 5 minutes. Season with fish sauce and lime juice. Lower the heat and add diced salmon and Fitness noodles® and cover with the lid for about 2 minutes. Serve with fresh coriander leaves and lime wedges.
