Green thai soup with chicken and Fitness noodles®.

2 servings
1-2 package Fitness noodles®
200 ml of Coconut Milk
2-3 dl Water
1 Lemongrass
25 g fresh Ginger
1-2 tbsp Green Curry Paste
2 Chicken fillets, shredded
100 g Green Beans
100 g Bamboo shoots
2 Scallions, sliced
2 tablespoons Asian Fish Sauce
1 ½ Lime juice

Cut lemon grass and beat the skewers lightly with the top of the knife handle. Peel and shred ginger and scallions. Add lemon grass, curry paste, coconut milk and water in a saucepan. Boil for 5 min. Add ginger, green beans, bamboo shoots, scallion and chicken and cook another 5 minutes. Season with fish sauce and lime juice. Lower the heat and add Fitness noodles®. Cover with the lid for about 2 minutes. Serve with fresh coriander leaves, chili and lime wedges.
