Pumpkin Protein CupcakesJune 2017
Traditional pumpkin pie in cupcake form and Fitnessguru style!
2 scoops One Bake®
1,2 dl Almond Flour
2 tbsp melted Fitnessguru Coconut Oil
5 st Fitnessguru Stevia Drops - Natural
1,2 dl instant oats
2 tsp baking powder
1 tsp baking soda
3,5 dl spelt flour
1,5 tsp cinnamon
0,5 tsp ground cloves
0,5 tsp cardamom
1,2 dl apple sauce
1/2 tsp salt
3 tbsp natural yogurt
2 tsp vanilla powder
1/2 pumpkin (middlesized hokkaido)
1 scoop One Whey® Isolate Natural
250 g Low-fat orange cream cheese
or natural cream cheese with orange peel
3 tbsp low-fat quark
1/2 tsp cinnamon
Preheat the oven to 220°C. Cut the pumpkin in half and place one haf in the oven for 20 minutes. Meanwhile, mix all dry ingredients in a blender. Cut the pumpkin into slices, peel it, and cut it into smaller cubes. Add the liquid ingredients and the pumpkin pieces into the blender and blend into a smooth batter. Pour the batter into the tins and bake for about 20 – 24 minutes.
Mix the the frosting ingredients into a soft and smooth batter. Put the batter in the refrigerator for about 20 min. Let the cupcakes cool down before you cover them with frosting.
