Low Carb Cauliflower Curry

2-3 portions

1 cauliflower
2 tbsp Fitnessguru Coconut Oil
2 1/2 tbsp soy
1 turmeric, or 1 tbsp ground turmeric
ginger, approx. 5 cm
handfull coriander (steams and leaves)
juice from 1 lime
1 piri piri, adjust the spiciness by the number of cores
1 tbsp rice vinegar 
1/2 tbsp sesame oil
1/2 tbsp fish sauce or extra soy for a vegan dish
1 1/2 dl coconut milk, the thick part
1 packet Fitness Noodles

Turn on the oven to 225 °C and divide the cauliflower into smaller parts. Mix melted Fitnessguru Coconut Oil with 1 tbsp soy in a bowl and massage the cauliflower with the mixture. Roast the cauliflower in the oven until soft, approximately 30 minutes. Make the curry paste by mixing turmeric, ginger, coriander, juice from lime, piri piri, rice vinegar, sesame oil, fish sauce, coconut milk, and rest of the soy. Pour the curry paste and a packet of Fitness Noodles in a frying pan and fry on medium heat for 5 minutes while stirring. Serve the noodles and cauliflower together with your favorite greens.
